A Pinot Noir that has been patiently crafted over the past decade. We began with five years aging in neutral oak barrels, which added unique savory aromas to the wine. In 2017, we bottled it with some extra yeast, sparking a second fermentation to naturally produce its tiny bubbles.
The result? A Blanc De Noir that sings with notes of minerality, lemon, fresh bread, and green apple, all wrapped in a beautifully aromatic structure. Experience the unique flavors of a white wine produced from red grapes. This vino is rich, complex, and knows how to leave an impression.
This has been a long, but memorable decade… Tons of memories have come and gone by in the vineyards. Our newest Blanc De Noir Sparkling Wine was created for the sole purpose of celebrating these last few years.

Liquid gold. The noble rot. A rare, once-in-a-lifetime wine never before released by Balletto Vineyards, we are proud to announce our Noble B Late Harvest Chardonnay! A limited release made from the elusive botrytis!
'Noble rot', or 'Botrytis Cinerea' as it's scientifically known, is a fungus that sets its sights on ripe, healthy grapes. It has a knack for compromising the grape skins, thus speeding up water evaporation and leading the fruit to shrivel until it resembles a raisin more than a grape. As the moisture in the fruit rapidly diminishes, the sugars and acids intensify, leaving winemakers with an unusually sweet yield.
The recent storms have created perfect conditions for the "noble rot" to thrive and work its magic on our ripe grapes... A rare event that may never happen again…
These grapes, with their elevated sugar levels, are the very essence of what makes 'noble rot' so prized in the winemaking world… And for the first time ever, Balletto’s vineyards have been crowned by this Noble Rot!
